French for “great growth,” Grand Cru is the designation given to a French vineyard known for producing truly exceptional wines.
The six-course menu features some of the world’s most prized ingredients, starting with a fresh Gillardeau Oyster, reputed to be the world’s best oysters, served with sea grapes and berries. This delicacy is paired with Ernest Rapeneau Brut, a Gold Medal-winning Champagne which features a floral nose to match the freshness of seafood.
Continuing the luxurious theme, the second course of Lobster Confit is served with fresh pomelo, fennel and coconut purée for a light and vibrant flavour, and matched with Chanson’s 2014 Pouilly-Fuissé Chardonnay from the Maconnais region, which has a powerful nose, acacia tree fragrance and citrus freshness.
This is followed by Alexander’s Golden Egg – a signature dish of Chef Alexander which comprises a cured organic egg yolk from a local farm, served with black Osetra caviar and paired with Chateau Villa Bel Air Blanc, an elegant white from the Graves region of Bordeaux, which starts with the exotic fragrance of ripened fruits and ends with a fresh, sweet aroma.
A prime beef main course will be served in two parts, starting with the tenderest Wagyu Striploin Nr.7, chargrilled to perfection and served with shallots, cauliflower and vanilla. This is coupled with a full-bodied Echo de Lynch 2014 Bordeaux Pauillac from Château Lynch-Bages. This is followed by Slow-Braised Wagyu Beef Cheek with celeriac, truffle and foie gras, paired with a premium 2011 Pauillac Bordeaux, also from Château Lynch-Bages, a wine which has been certified as one of the Cinquièmes Cru in the Bordeaux Wine Official Classification of 1855.
