Sourcing as many products as possible locally then supplementing ingredients with specially-imported goods (such as flour, artisanal cheeses and premium Australian beef) to round out his kitchen, the classically Italian dishes are instant crowd pleasers.  

Delicately crafted pizzas baked to perfection in a traditional pizza oven, garden-fresh salads complemented by creamy cheeses and fresh handmade pasta that seems to offer the key to life as Italian director Federico Fellini famously suggested, highlight Chef Gianandrea’s mouthwatering menu that changes with the seasons.

All can be savoured while sitting in the resort’s contemporary Silk Restaurant that manages to be at once incredibly stylish yet entirely inviting. To end the satisfying meal, indulge in a sweet treat, or dolce, such as Chef Gianandrea’s tantalising homemade tiramisu followed by a reinvigorating limoncello or espresso.
