Executive Chef Bart Cywinski, the leader of this revolution, has opened up the menu to explore rich offerings of Italy’s Mediterranean coastline, drawing from the influence and inspiration that shaped the cuisines of neighbouring countries.

Stunning menu highlights that illustrate his concept include Smoked Haddock Risotto, Black Cod, Pan Fried Foie Gras, Brown Crab and Tomato Canelloni, Andaman Seabass and Australian Lamb Loin.

And in all these superb culinary creations, he fulfils his commitment to working with sustainable, organic and local products sourced from Thailand.

He brings his skills to Hotel Muse after working in some of the finest kitchens in Europe and Asia, including The Grill at the Dorchester in London, ToTT’s and Roof Terrace at the Mandarin Oriental Excelsior Hotel in Hong Kong, and most recently, JAAN, the One-Michelin Star restaurant in Singapore ranked 44th in Asia’s 50 Best Restaurants 2018.
